Ingredients: Onion sweated in butter, sautéed mushrooms, Camargue rice cooked in water, 
hard-cooked eggs, Iraty trout fillet poached in broth, light fish mousse, 
chopped chervil & chives, brioche dough, thin pancakes. 
White butter sauce
Cooking for 25 minutes at 200 degrees
